It looks like I have lots of hair!

Even I can do a sock bun! Thanks pinterest!  I found a great tutorial here! Check out Kaitlyn's tutorial, this one does not involve attempting to roll your hair around a sock.  So smart!

Impromptu lunch

Xman man and I were busy during our two hour lunch break today! We went to see Mama Pa at the bank, picked up a few necessities at Target, spray paint at Home Depot, and had Chick-fil-a for lunch. Even though it was 2pm on a Tuesday CFA was packed. So when I saw a green jeep outside, I looked inside and saw Chonte'! So Xman and I had lunch with Chonte' who had Ben to a movie an didn't know what she was doing next ... (sorry I was day dreaming) ... And we headed back to swim lessons! A big thanks to everyone in line at CFA so that I had time to see I could sneak Ina quick lunch with a great friend!

Blueberry pie

I had never really been a fan of blueberry pies until our last trip to the UP of Michigan ... which was probably 4 years ago ... so sad. Anyway on that trip our lovely friends stopped and bought a blueberry pie from a bakery in Paradise, MI. It was amazing! We each had a piece when we got back from the falls that day, and another piece the next morning as our breakfast, with coffee, of course. And of course we were sitting out on their deck chatting and looking at Lake Superior.

So I searched pinterest for blueberry pie recipes and choose this one based on the hold together aspect in the picture. And I liked that almonds were used to help thicken, instead if things that sound less tasty.

Thank you Hey, Lady Grey!

I did modify the recipe, because I didn't have a lemon, and therefore no zest. And I used a pie crust from the freezer section, because ... I didn't want to make the crust.

Barn star project

So I saw this little star on pinterest, and it seemed do simple. Make a star out of a cereal box? Yes! So, rustic is not really my thing, but I have been looking for something to go above my fireplace (in my frame that has been empty since Christmas). So in honor of July 4th here are my pics.

 Not too shabby.
I do need a more symmetrical star.
And Xman did a great job painting one star which is wedged in the picture frame at this point also.

Good and bad of swim lessons

How many days does it take for the chlorine to eat your arm hair? I spend 6 hours a day, 5 days a well in chlorine in the summer. It took 7 days this summer before I noticed my arm hair was gone!

I do have great rewards, like my father babysitting Xman in his office. I get to swim with the little man when I have off classes and he is not sleeping. He jumped off the board today for the second time this summer. He thinks he runs the pool!

I also get the best ice ever and diet dr pepper thanks to Dad!

I get to hear the crazy things said at the pool. This year a little girl slipped and fell on her way into the pool. Her dad rushed over to stop her crying. He asked her, "where does it hurt?". "my butt" she cried. "do you want me to kiss your butt?" he generously offered. "no" she giggled and got in the water.

I have been doing this a long time, and though I hurt from carrying fighting kids in the deep end, and from being pinched, scratched and pulled at, I do enjoy what I do ... Even if I complain about having to go - kid's attitude's are contagious!

Breakfast tacos with corn & black bean salsa

Corn tortillas filled with scrambled eggs, spinach, onions, ground turkey and feta (leftover greek pizza filling) with homemade roasted corn and black bean salsa - yummy breakfast after our trip to the park.

New motivation

Hubby has cellulitis again and needs to lose 150 lbs in 2 years. I think I am going to try to gradually (over the next few weeks - 3 tops) move us toward Dean Ornish's spectrum diet. That will be a big change, but that is obviously what we need.

The naughty question of the day (yesterday)

One of my student was trying to get his pawn to ask me "where's your labia?" in front of two classes worth of students. Keep in mind i am hearing their entire conversation. The instigator told him is was a bone in your shoulder.

So the pawn, who is starting to learn not to trust the instigator, asks, "what are the bones in your shoulder?". So I list the bones of your shoulder. "That is not what you said." says the pawn to the instigator and the conversation gets quiet again, trying to convince the pawn again.

Finally, he asks the question, "What is Libya?". "A country." I say and move on. Silly teenage boys.

Drunk driving simulation

At school today we had a drunk driving simulation. The cops brought in cars, a kid was in the road playing dead, two students were in one of the cars who were playing hurt and did a great job acting. But the acting award goes to the drunk driver, he stumbled around and miserable failed his sobriety test, as you would expect from the number of beer cans that fell from his car as he got out.

We knew about this all week, but we're supposed to keep it a secret from the students. The initial shock if leaving for what you think is a fire drill and seeing that is what we are after. But some of the kids started noticing cop cars blocking off roads and things like that, and one asked a teacher what was going on. Without missing a beat the teacher explained that there was going to be a major drug search because it was 4/20. Best part - a kid in the class said he needed to go to his truck.

GGT - Day 3

Day three we had planned a trip to a cavern. Top of a mountain one day, underground the next. So we got up and headed to Bull Shoals. This was Friday during Lent, so I couldn't eat meat.

It was a beautiful, hilly, drive on the craziest road o have ever been on. It had so many hairpin turns and there were more curves than straight patches. We saw some beautiful view of the mountains ... and lots of tornado shelters and rebel flags.

So after 2 1/2-3 hour drive up here and based on our hunger issue the day before I asked to eat before we went to the cavern. There were only 2 places in town to choose from, and the one we picked, had a bunch of mounted fish in a case at the front of the restaurant. Xman loves fish! In fact, he loved this fish so much that we couldn't get him in the restaurant without tears. Thankfully there was a fishing net with lures in it about our table and we convinced him they were fish. He wouldn't eat, but I had catfish, and we headed to the cavern.

The cavern was cool, but not what I expected. We got to see a few bats really close up, they were oblivious to the fact that we were there. We saw really cool formations, Xman wanted to touch everything. The caverns were small and dead-ended, but we saw so much on the way back. There was a waterfall, and shield stalagtites, and a box formation, and cool columns. Our guide was good. In fact I dropped Xman's jacket and he mailed it back to us!

Then back to Grandma's town. I was taking pictures of a few of the crazy things we saw and scouting several things I wanted to plant in the yard. And asked Robert, "how many rebel flags have we seen today?". "At least 5" he said. Then I asked, "How many people have we seen that were not white?" "none.". I find this a little more than creepy.

We were wanting to go the fish hatchery, but we're too late. Then we stopped and talked to Robert's friend from high school. That was cut short by his brother's call that he was at Grandma's.

Everyone was wanting to eat at Grandma's. We didn't want to eat at Grandma's. We were not hungry and we made some of them mad. They are food pushers like i have never seen before! We had a great time catching up with brother, then when we were leaving the drama began. His uncle was mad that we weren't stopping by to see an aunt tomorrow on our way home. And apparently we spent too much time talking to Robert's brother. So uncle made a snide comment about "Y'all only came to visit with one another."

Apparently he felt left out, even though the night before we talked with him for a couple of hours. And they were made because we wouldnt come over for breakfast - we needed sleep and didn't want trade sleep for food. Food pushers I tell you!!! Did I mention every time we went there we left with at least one grocery bag of food that they wouldn't let us leave without. As for not stopping on the way home, we had spent more time in the car than out of it for the last three days, and we were ready to be home. And we were on a tighter schedule, because we had to get home in time for Robert to go to work. We were in two towns with my aunts and uncles and didn't have time to see them. Sorry! I digress. The next morning it was time to head home. We had long but uneventful trip home, and made it home in time for Robert to go to work. About an hour before we got home Xman had said Mommy, for about 30 minutes straight, until I finally gave in and gave him his paci, then he tools second nap.

GGT- Day 2

Day 2, we got up and packed thecar and checked out the new Arkansas Travelers Stadium ... through the fence. The after talking to Robert's sister, we decided to climb Pinnacle Mountain then head to see his sister.

Yes, I said climb a mountain ... yes, with a two-year old ... where was your advice before we did this? Robert had climbed this in high school, and did not think it would be too bad. The map showed it was a 1.2 mile hike up the mountain. That did not sound really far to me, and in the beginning the path was dirt, with a few rocks and roots and relatively flat.

The path changed to a steep gravel road, the a rock staircase, then rocks. We saw a snake, a great view of the river, had several discussions of how far we should go. At one point I could see to top, and Robert said it would bea shame not to get pictures, so I told him to stay with the boy and I would go take pictures. He asked if I could make it. My response, "if I am not carrying Xman? Definitely." so up the three of us went. Did I bring up my concerns about having to go back down? Definitely!

What did we see at the top. A great view of a field and a road ...and a baby crying at the top because he needed a nap, a drink, a diaper change, and goldfish! Can you believe that poor d's parents? Oh wait, that was my kid. Poor Xman!

So my legs were already so fatigued from climbing up that I kept thinking they were going to stop working all together. By this point, what had started out as a very cool morning, has become a very warm, sunny day. I stopped to cry 3 times, and Xman fell 2 times before we got back to the car. Oh, and Xman did fall asleep on the last part of the walk. But we climbed a mountain.

We went to Robert's sister's house and met our niece. Our Niece and Xman played for a while, then it was back in the car to forage for food. That did go as planned. We were all cranky and hungry and passed up food, then got stuck in traffic behind a wreck, finally grabbed some fast food and headed to our next GGT stop.

We went to Robert's Grandma's and visited with he and his uncle & his uncle's family that live with Grandma. Finally we head to get food and to the hotel for a much needed shower and rest. Did I mention we didn't think of sunscreen either?

The Great Grandmother Tour - Day 1

So at the end of Spring Break the family embarked on the Great Grandmother Tour 2012. This is an insane trip to see Xman's Great Grandmothers that live in Arkansas. Now keep in mind this was also our family vacation for the year, and not just a trip to visit all of our relatives that live in Arkansas, which I am pretty sure would take us at least a month!

So we left our cozy home, and headed to Camden and spent about an hour with my Meme and Granny. I just missed one cousin at Granny's, and forgot to take a picture, but I am hoping she is coming here for a visit before tis summer, and we can correct my mistake at that time. He was very good at finding toys at both houses. I caught the sweetest moment with Xman and MeMe while she was showing him videos of himself on our flip camera. (I will attach the picture and try to move it later when I can get to a real computer.)

Then back in the car, and we stopped to see Snotty & Cheesy at college, and Xman picked flowers and cheesy blew them in his face, and taught him to blow them.

Then back in the car. We were trying to see Robert's sister before her baby went to bed, but missed our opportunity, so we headed to dinner in LR. It took us a while to find Juanita's, since it moved, but Robert really wanted their amazing queso, and so we found it and the queso was amazing! But the fajitas and margaritas were probably the grossest I have had. It's between 88 & 9 pm at this point so we found our hotel for the night (Wyndham - very nice), and watched a movie with the boy.

The boy was good in the car, and travelled better than I did (this is a trend that will continue most of the trip).

My absence ...

Two months without my posts ...how have you survived. I will most likely have a blogging marathon to catch you up! Upcoming stories ... The Great Granmother Tour, the Memphis Trip, Easter and baking, the garden ...who knows what else I will think of as I write these! Oh, and for some reason the second birthday party post failed to post last time I was on,so I just posted it!

Xman's 2nd Birthday

Well, not many non-family guests showed, but other than that the party was a success.

The birthday boy had a good time and did not want his guests to leave ... But did not have a melt down ... at least not until his cousin took his toy ... but that was expected.

The pudding cups were great. I ate the vanilla with cool who and graham crackers, and I think I should definitely make more for us at home.

The RAWR and hats turned out really cute, and Mom said she is leaving the RAWR up for a while.

I made dinosaur tails for Xman and Delilah, but they were very last minute and I messed up Delilah's so I will have to finish it for next weekend and post pictures then.

Xman didn't want anything to do with his cake, and the hubby stuck his hands on the cake, and Xman looks at his hands like "why would you do that?"

Aunt Stac got great pictures - I totally slacked on the pics and spent more time enjoying the party. Stac even got the smoke off the candle ... All that practice blowing bubbles helped Xman blow his candle out on his own!

In about a month...

I have lost 10.6 lbs. Yesterday was the beginning of Lent, and I am giving up the extra calories that I have been consuming that are over my calories guidelines. Hopefully, these 40 days will act as a opportunity to do what I say and me a healthier me, for me and those I love.

2nd Birthday Party

The second birthday party for Xman is more or less planned. Thank you Pinterest and Google. I have found several cute ideas that do not involved a party pack bought from the store and isn't overly coordinated - which tends to make me crazy ... well, crazier!

My next step is working out a schedule for all the DIY fun between now and then. March 3rd watch out! After the party I will post pics and let you know how everything goes!

Challenge - changed

Okay, so I am sure you thought I quit ... and I have quit my exercises ... and lost 9lbs. I am planning on exercising again, but can only focus on one thing at a time, and for the past 2ish weeks I have been focusing on counting calories. Once the weather is warmer it will be easier to drag Xman on walks and other such luxuries I cannot contemplate on a 28 degree morning.

I have been using an app on my phone, and although I over shoot my calories most days, I am still getting a bit of success. The weekends are bad, and I spend most of the week working off the weekend, but fortunately it's the weekend plus a little. I saw a number this morning I haven't seen since I was nursing, and before that it had been about a year before Xman. I still have a LONG way to go, but I have gotten started and I am hoping to build on this momentum.

So the suspense has been killing you ....

I know you have been refreshing this page all day waiting for the moment you would discover my plans today - that moment is finally here.

We had a great family day. We went to the aquarium to see Elmo ... I mean Nemo. Little man was very excited to see the fish. so excited that he napped on the way there.

I think he would have been happy to stay at the Nemo tank all day. He was less excited about the sharks, and the cat. He ribbeted at the frogs, and chomped at the dwarf cayman that was at the glass, but mainly just wanted to see smallish fish - because the big ones are scary - duh!

Then we went to ikea for a few supplies and found Xman's birthday present there also! And I am considered another project for my classroom - large frames with gift wrap inside to work as dry erase boards for class agendas. I think I will look for gift wrap tomorrow. Xman had a great time walking through the plastics ribbon curtain in the kid center.

Wehen we left he peed out of his diaper, so he went home with a new diaper but no pants on. He fell asleep on the way home. I found a movie at redbox and I decided to skip the big birthday dinner and opt for Chicken Express instead. Yes, I know it is bad. No, I do not care.

So dinner and a movie at home. Little one is in the bath right now, which is daddy's job tonight.

Oh I did get to sleep in this morning. I slept til 7 and then just laid there until 8!!! The best gift of the day:).

Oh how your perspective changes with kids and age!

What do I want?

My birthday is Sunday, so I have had a slot of people asking me what I want to to or what I want as a gift. I don't know. I know a few things I need but I am not too excited about ...

The hubby is supposed to me taking me out tomorrow. I don't know where we are going and I am supposed to be in charge of planning ...

I want a game night later this month.

I want a clean house that I don't have to clean by myself.

I want to sleep in until 730 or 8 one morning a week or every other week.

I want my hubby home when we are home more, AND less worries about bills.

I want clothes that I like AND that fit.

I want time to workout without the guilt of pawning the kid off on someone else ...

I want time to go to see a new doctor.

I want an eye appointment and to switch back to contacts.

I want time to play, with my kid, with my friends, with my family and most of all with my husband.

Apparently I want it all ... and I still don't have a plan for tomorrow.

Pee-pee

Xman is obsessed with sitting on the potty! He is not quite two, and Ian sure this is as a result of a little boy at day care who is currently potty training. I hope all of this "practice" pays off when it is time for him to really pee-pee in the potty.

Finding Nemo has taught me so much

Clown fish are not funny

Sea horses do not enjoy being called pony boy (though I find it incredibly funny)

Inverts don't speak ... except for the crab ... and the sea star ... and the octopus ... okay, sea cucumbers don't speak ... except in jokes

Es-cap-ae is spelled like escape

Don't fight over a mask near a shark

Angler fish don't speak ... and though the are fast they are dumb

Clown fish live in an anemone ... Ananemone

You should never tough big butts ... that is when you get kidnapped

Sea gulls are evil drones ... though deep down I always knew it ... Mine!

Just keep swimming!

I think we need to get hooked on a new movie!!!

I hate the super bowl

It's on my birthday. I hate football. My husband has to work. Every one else has a party to go to. I hate the super bowl.

Things that seem odd ...

I saw a fire truck at the gas station today ... getting gas. I know they have to get gas, but I don't really ever remember seeing a fire truck getting gas ...

Challenge day ... who cares!

I did exercise last night, but not tonight. My sister & a friend at work got me started on a new fitness app called My Fitness Pal. It's free and super easy to use, but it keeps reminding me that I am eating to much and exercising too little. Last night I did 160 crunches and 5 minutes of step ups on a 10 inch box - ouch! My butt hurts tonight!!! With this much pain my butt should be rock solid ... it is not.

Whatcha making for dinner? Pulled Pork is on the Menu

Pulled pork, potato pancakes and salad ... not exactly lite, but very tasty!

Not a slacker

Not a slacker ... at least not completely ... 240 crunches. Tomorrow I should be back to normal for working out during conference.

Challenge

My body is revolting - not because of the exercise (or lack there of so far today), but because of switch up in drugs ... not a great day and just gross overall. I am about to put up the boy and try to do something tonight (other than dishes and laundry and cooking and bathing and reading ...

Farting is funny!

It takes a little boy less than two years to decide that farting is possibly the funniest thing ever! It started in the bath tub tonight, and it continued to the changing table. Gassy, gassy boy ... We should have named him Farty McGaserton ... Or Vladimir Putin ....

Sunday, January 22, 2012

Zucchini spaghetti

This is my favorite and one of Xman's favorites as well ... He ate all of his and then started eating off my plate tonight!

I first saw this on Rachael Ray. http://www.foodnetwork.com/recipes/rachael-ray/spaghetti-with-zucchini-and-garlic-recipe/index.html

I did even more garlic, just a few more cloves, and I don't add the parmesean to the whole bowl. We just add it as we like it on our plates. I add peas on top for me and Xman. So good!!

Saturday, January 21, 2012

The first hour ... On a Saturday

What do you do the first hour you are up on a Saturday morning? Here is what I have done ...

Slept in til 630!!!
Get the boy
Change the diaper
Make his breakfast and deliver it to him as he watches Dinosaur Train. Make my coffee and a graham cracker with peanut butter (breakfast of champs and people with no food in the house).
Play with the talking dinosaurs
Put all the toys up
Shoot some hoops
Get the giant shark back out ... Not to play with, just so it can lay in the middle of the floor
Drum!!!
Batting practice
Get all the dinosaurs back out
Play with the dinosaur train set in our pajamas on the kitchen floor
Find a ball - play catch
Find the light up ball - more catch
Snacks for the boy and blogging for the mommy.
Hour number one of the day ... What else will we do today? A lot!

I am off to play with the train again ... This is much different than sleeping to 10 coffee breakfast and shower which was probably closer to my sat morning before Xman. Only one more hour before Daddy gets up!

What is for dinner? Pork Tenderloin

One of Robert's requests for the week:

Pork tenderloin, smashed potatoes and broccoli (I wanted roasted broccoli but forgot to buy the fresh broccoli.)

Balance Challenge for Anatomy

No need to exercise today. Four hours of a balance challenge in Anatomy proved to be enough. I knew I would be demonstrating all day, so I took it easy with first period, but by 5th I was already sore and not doing much more than demonstrating.

My students were challenged to hold each pose as long as they could with a maximum for five minutes. I would definitely say that form was not important to them - form was pretty sad most of the day. But at least one student maxed out (hit the five minute mark) on almost all of the poses. I am going to try to alternate days for a little while with yoga and what I have been doing.

Tree
Star
Warrior 3
Eagle
Hand to Big Toe
Flamingo
Dancer
Up on your toes!

I used the poses i found on the Reach website
http://reachyogastudio.com/posesforanxiety.aspx

Making posters

Sounds easy, right? Apparently not. I have been asking students to do tis for years and a few do a great job, and the rest ... I have determined that some people can come up with a good idea, some can make a good looking poster, but very few can do both. So I made a rough draft and a poster. I am not an artist. I wrote everything in my handwriting (which changes often) then went over and over the original writing and drawings to even out lines and things of that sort. Let's see if I can now get others to follow!

I have a problem: Garlic edition

I love garlic! L. O. V. E. love!!!!! If there were garlic scented candles or perfume I would buy it! When a recipe calls for one clove of garlic I add two as long as they are really big, if not then four!

Too much loss

A local teen death has affected those we love this weekend, and now a professor that worked at the school died this morning. Too much! I can't imagine what tomorrow holds for my students who were also in her class. Most already know.

Day 21 ... so far

Well, I found a great fitness website that I am no where near ready for, but I like the idea of a minute fast cardio alternating with a minute of slower cardio. So I tried it today ... kind of. I got 2 steps of different sizes (from the firm workouts) out of the closet where they allow me to reach my t-shirts. And alternated my minutes between the two steps ... but I only made it a total of 8 minutes. I am going to try to build up as we go ... I guess that is why I refer to this as the challenge.

Products I love

This is the toy solution ... It doesn't contain everything, but it hides a lot, while still keeping it handy.

Day 20

Nothing - we did nothing all day. Not really. Church, breakfast with the fam, laundry & dishes ... But other than that the day was thrown off by the hubby's work schedule, and the cold weather.

Day 19 (Saturday)

I spent quite a bit of the day at a swim meet and did enough climbing stairs to skip out on squats and I only got 1 set of everything else in because my presence was requested often while The hubby gave Xman a bath. But one set is better than just sitting!

Easy Snickerdoodle Ice Cream

Okay, so technically these little ice cream cups are Xman's ... But they are on the shopping list for tomorrow and I wanted something sweet. A light (or not so light, depending on the size of your sweet tooth) sprinkling of cinnamon sugar transforms regular homemade vanilla into something that to me tastes like cold Snickerdoodle cookie dough ... may not exactly, but close enough!

Best ever smoothie!

One of the healthier things I have been trying to do is getting all five colors of fruits and veggies a day. But I am broke and fresh fruits and veggies tend to go bad a little too quickly for me. But I have been getting almost all of them thanks to a spinach salad for lunch and this smoothie.

1/2 c frozen fruit
1 banana
1-2 T wheat germ
2 oz nonfat plain yogurt
3 oz pineapple juice
1/2 c water if yogurt and pineapple juice is frozen

I am trying to make this very convenient for myself so I pre-package everything I can. One ice cube is one ounce, if you are looking for ice cube trays for this purpose it is worth getting the more expense trays at target or Walmart. I tried the cheapo ones for the first round of Xman's baby food experiment, then went and bought the better ones.

I put the 1/2 cup frozen fruit in a plastic bag and then add 2 cubes of yogurt and three cubes of pineapple juice. That way when I come home I break up a banana in the blender, add wheat germ and them grab a bag from the freezer and blend away.

The yogurt only comes in giant tubs, so I started putting it in ice cube trays and freezing it so I can pre-package my smoothies and not have to worry about the yogurt going bad or measuring it every day.

When I started I had 6 oz cans of pineapple juice, so I would pour in 1/2 of a can and then put the rest in in container in the fridge for the next day. Once I finished all the little cans I bought a big can (to save a whopping 20 cents!) so I put a couple-of-days-worth jn containers and froze the ret. it just as well frozen, but you need to add about 1/2 c water.

Yummy!!!

Myers-Briggs Test

http://www.humanmetrics.com/cgi-win/JTypes2.asp

I recently had a friend ask me to take a personality test, sure thing ... I have lots of them :). I took it again today to get a pic of the results, the numbers changed a bit, but still etsj. What are you?

Things I love

Taking a shower! I know, you are welcome. But this is a bit harder than you would think when you have an almost 2 year old at home, and a husband who works two jobs. During the week I set an alarm for 530 so I can shower before the boy gets up. If he gets up early Robert has to get up early.

But on Saturdays I want to sleep as long as possible and it throws the shower off a little. When and how I shower depends on what time Robert goes to work. If Xman sleeps in and Robert goes to work early, I sometimes have to wait until nap time.

But today ... I had an epiphany! Xman figured out how to get around the cage guarding the fireplace and tv stand from a little man. Who loves to climb and push buttons. So we folded the cage up and stuck it behind the chair in the bedroom. But today it was my salvation. I put the cage together and made a weird diamond-type shape so he could watch Dinosaur Train (our favorite tv show) and could still get into the bathroom to talk to me and make sure I did not run away. Throw in a few toys that can be thrown out of the cage and I had a full 15 minutes to shower and get dressed before he started wanting out ... and now he wants back in ... Giving me time to post this!

I am planning on using this when we garden in the front yard too, practicing in the backyard first, of course.

Lazy Saturday morning

Today a friend ran across this picture with the following description

What?!!

Never in my life could I imagine this!!

Then we went to the blog and read the description. I thought I was going to puke. The description was something to the extent of wear until full, empty clean repeat. And they last for years.

No offense to those of you who use or like this idea, but obviously this is not for me. My mind has been officially blown!

This looks disgusting ... But Tastes so Good ... Chicken Taco Plate

Although this looks disgusting the was amazing! I really wanted Chipotle or Del Taco tonight, but I am trying to eat out less, so I improvised. I made chicken with taco seasoning, brown rice, smashed black beans, corn, added sour cream and guacamole,. Then I heated up a pan to toast my tortillas - cut them in fourths and pretended they were chips! So good!

I truly apologize for the picture. I didn't think to take a picture before I started eating, but it didn't look a lot different - just all the different ingredients puked on my plate slightly on top of one other and slightly stirred. So good!
